Shorthand for complex skies?

I watched Ollie's first sky video 👍 on YouTube and am wondering how you would quickly put down the idea of the second sky if you were on-site and didn’t have time to wait for washes to dry, and didn’t have a camera. I’m thinking in terms of “taking notes” in a sketchbook while out and about rather than doing more involved sketches or actual paintings. I’m interested in speed because I’m often short on time, plus I’m very shy about people possibly looking over my shoulder and seeing my work. I’m new to watercolor (and landscape), and am coming to it by way of using it for quick color studies for figure paintings in oil, or for urban sketching (pen and wash). I’m very interested in and willing to put in the time to learn to paint proper watercolor skies, but I also would like to develop some kind of shorthand technique for gathering information en plein air that I could use to develop into a painting while in the studio. I've been practicing quick skies in my studio for the past couple of months, but complex skies have me beat. Maybe I'm too impatient and I just need to wait for the washes to dry? Or maybe the sketches by nature will just have to look different (i.e., a different style) from finished paintings? Maybe gouache would work better for the quick sketches. Thanks for any thoughts.
