A question about using tube paint that never seems to get addressed.

How much do you place on the palette before painting?

Mine invariably dries out and I end up using pan paint. When that happens, do you clean out the well and start again? It seems like you would always have unused paint, either some leftover, or in colors not used in the work, a whole bunch leftover.
